As the hot weather continues to stick around, it’s a great time to indulge in one last summer cocktail. My “Les Spritz” is based on the classic aperitif of northeastern Italy, Lo Spritz. The original drink is refreshing, a little bitter, and a vibrant orange color thanks to the liqueur Aperol. With this as a starting point, I’ve created a lovely summer cocktail that’s light, fruity, and brisk, like fresh-squeezed grapefruit juice with a kick. Enjoy it during these last dog days of summer.

Les Spritz

2 oz. Gin (I like New Amsterdam)

1 oz. St. Germaine liqueur

½ oz. Aperol

1 oz. lime juice

½ oz. simple syrup

Prosecco

 

Combine all ingredients except for Prosecco in a shaker with ice.

Shake; strain into a champagne flute.

Top with Prosecco
